How to Make Protein Egg Bites at Home

Start by preheating your oven to 350 degrees.

In a skillet over medium-high heat, cook the chopped onion and green pepper for about 5 minutes until they begin to soften. I love using a bench scraper to transfer chopped veggies to a skillet!

Make Ahead Protein Breakfast Egg Bites for Busy Families

Love using a bench scraper!

Add the quartered sausage and continue cooking for about 8 more minutes, or until the sausage is slightly browned and cooked through.

While the sausage mixture cooks, whisk the eggs, milk or cottage cheese, shredded cheddar cheese, salt, garlic powder, Italian seasoning, and chopped chives together in a large bowl.

Healthy Freezer-Friendly Egg Bites for Quick Breakfasts

Parchment liners help things not stick!

Line 12-14 muffin tin cups with parchment paper muffin liners and lightly spray them with avocado oil.

Fill the cups with the sausage mixture first

Divide the cooked sausage and veggie mixture evenly between the muffin cups. Then pour the egg mixture over the top until the cups are filled evenly.

The Best Homemade Egg Bites Recipe for Brunch or Meal Prep

Then add the egg mixture

If desired, sprinkle extra cheddar cheese on top before baking or add a spoonful of cooked quinoa to each cup for even more protein and texture.

Bake for 18 to 22 minutes, or until the centers are fully set and no longer jiggly.

Allow the egg bites to cool slightly before serving.
