Between work, appointments, school drop-offs, errands, or simply trying to get out the door on time, making a nutritious breakfast often gets pushed aside. These baked oatmeal bites are one of my favorite meal prep breakfasts because they're easy to make, packed with wholesome ingredients, and stay fresh in the refrigerator for up to a week. You can enjoy them warm straight from the microwave or cold right out of the fridge. They're portable, filling, and perfect for eating on the go.
This recipe was inspired by my father-in-law after he tried baked oatmeal at a friend's house and asked if I had a recipe. I started experimenting with several of the best baked oatmeal recipes online and created this version that's simple, delicious, and incredibly versatile.
Now they're one of my favorite breakfasts for busy weekdays, weekends filled with activities, and even mornings when I have fasting blood work scheduled. I simply take one with me so I can enjoy breakfast immediately after my appointment.

Meal Prep Tips
These oatmeal bites are ideal for meal prepping.
Makes 12 oatmeal bites
Refrigerate in an airtight container for up to one week
Microwave for 20–30 seconds to reheat
Delicious eaten cold
Freeze individually for up to three months
Thaw overnight in the refrigerator or microwave from frozen
I love making a batch on Sunday so breakfast is ready for the entire week.

Healthy Ingredient Benefits
Whole Rolled Oats
Oats provide complex carbohydrates and fiber to help keep you fuller longer while supporting heart health.
Applesauce
Instead of relying on extra oil, applesauce adds moisture, natural sweetness, fiber, and helps bind the oatmeal together. I learned this in high school when a friend and I were looking for ways to make our brownies (my favorite dessert!) lower in fat. Using applesauce instead of oil in brownie mixes does just this!
Cinnamon
Besides adding cozy flavor, cinnamon may help support healthy blood sugar levels and contains natural anti-inflammatory properties.
Eggs
Eggs add protein and help create the perfect texture. They also bind together the ingredients nicely. Vegan? Make a “flax egg” by mixing 1 tbsp ground flaxseed + 3 tablespoons water, let it sit for a few minutes, then adding to the recipe.
You’ll need enough for 2 eggs for my recipe and I know this works as I used many “flax eggs” when I tried being vegan for several years. My doctor had me add some proteins like chicken back into my diet when I was having some stomach concerns linked to my vegan diet.

Easy Ways to Customize This Recipe
One of the best things about these baked oatmeal bites is how customizable they are.
Try adding:
Pumpkin puree and pumpkin pie spice (think fall Pumpkin Spice recipes cravings)
Apple chunks and pecans (fall and winter cravings)
Peanut butter and chocolate chips
Banana and walnuts (comfort food)

Absolutely! Freeze them individually and simply microwave whenever you need a quick breakfast.
Can I eat them cold?
Yes! They're surprisingly refreshing straight from the refrigerator.
Can I use dairy milk?
Yes. Dairy milk, oat milk, almond milk, soy milk, or cashew milk all work well.
Can I make these gluten-free?
Yes! Just use certified gluten-free whole rolled oats.
Can I use quick oats?
I don't recommend it. Whole rolled oats provide the best texture and keep the oatmeal moist. Quick oats will produce a very dry baked oatmeal, but if you experiment and it works for you, tell me in the comments how you did it!

Ingredients
3 cups whole rolled oats (don't substitute quick oats—they'll make the oatmeal dry)
1¾ cups milk (I used unsweetened almond milk, but dairy milk works great too)
2 large eggs
½ cup maple syrup (or your favorite sweetener, I get the best price on pure maple syrup that is delicious at Sam’s Club)
¼ cup melted unsalted butter (I used ghee and get the best deal at Sam’s Club)
¼ cup applesauce (I used unsweetened)
1 teaspoon baking powder
1 teaspoon ground cinnamon (optional but delicious and adds anti-inflammatory and blood sugar-supporting benefits)
1 teaspoon vanilla extract
¼ teaspoon salt (we use BAJA Mineral Sea Salt)

Blueberries
Raspberries
Strawberries

Chocolate chips

Best Healthy Breakfast for Busy Weekday Mornings
Directions
Preheat your oven to 350°F.
Line a 12-cup muffin tin with parchment liners and lightly spray with avocado oil.
If you're not using liners, generously grease the pan or use silicone muffin cups.
How to Make Healthy Baked Oatmeal Bites
In a large mixing bowl, combine:
Rolled oats
Milk
Eggs
Maple syrup
Melted butter or ghee
Applesauce
Baking powder
Cinnamon
Vanilla
Salt
Stir until everything is well combined.
Using a large ice cream scoop, divide the mixture evenly among the muffin cups.
Add berries, nuts, or chocolate chips before baking if desired.
Bake for 25–35 minutes, or until the centers are set and no longer jiggly.
Start checking at the 25-minute mark.

Larger pans will cook more quickly, so begin checking for doneness around 25 minutes.
