This is my own version of the famous Chicken Marbella, as seen in the cookbook The Silver Palate Cookbook. You can still buy it on Amazon here. I highly recommend it as I learned even more about cooking and experimenting from one of the authors, Sheila Lukins, who was an amazing professional chef that studied with Michelin star chefs (if you watch The Bear show, this is a BIG DEAL in the restaurant and food world) and so much more.

In the cookbook, she used prunes instead of cherries, olives and it’s a giant recipe for a crowd. Mine is more of a weeknight or weekend night recipe for those of you that only cook for smaller crowds. Add the olives if you want, but the capers are enough for me. The prunes are delicious, but the cherries don’t quite give you that extra fiber if you don’t need it.

Step 1: Marinate the Chicken

In a large glass bowl, combine the red wine vinegar, olive oil, capers, cherries, oregano, bay leaves, garlic, salt, and pepper.

Add the chicken breasts and toss to coat completely. Cover the bowl and refrigerate overnight. If you prefer, prepare the marinade in the morning and allow the chicken to marinate throughout the day.

Step 2: Prepare for Baking

Preheat your oven to 350°F.

Spray a 13 x 9-inch glass baking dish with avocado oil.

Place the marinated chicken and all of the marinade into the prepared baking dish.

Pour the white wine around the chicken.

Sprinkle the brown sugar evenly over the tops of the chicken breasts.
