If you love those fluffy coffee shop egg bites but don’t love the price tag, this easy homemade version is about to become your new favorite breakfast meal prep recipe. These Starbucks-style protein egg bites are packed with savory chicken sausage, cheddar cheese, fluffy eggs, and colorful veggies for a healthy and filling breakfast you can grab all week long.
One of my favorite things about this recipe is how customizable it is. You can easily switch up the veggies, cheeses, meats, and seasonings depending on what you already have in your refrigerator. They’re also perfect for “brinner” nights (breakfast for dinner), lazy weekend brunches, or even group gatherings because they bake up fluffy, cheesy, and delicious every single time.

Muffin pan, parchment muffin liners (best for non-stick), measuring cup, spatulas, cutting mat, knife, skillet (we love Thyme & Table from Walmart), whisk, bench scraper

12-14 egg bites
Ingredients
10 eggs (we buy or organic eggs at Sam’s Club here as their price is the best)
1/3 cup milk or cottage cheese
1/2 cup shredded cheddar cheese
1/2 teaspoon salt
1/2 teaspoon garlic powder
2 tablespoons chopped green onions or chives
1 teaspoon Italian seasoning
1 chopped green pepper
1 package sweet Italian sausage (I used chicken sausage and quartered)
1/2 chopped onion
Optional Add-Ins:
Extra shredded cheddar cheese for topping
Cooked quinoa
Bacon crumbles
Different peppers
Spinach or mushrooms
Pepper jack, mozzarella, or feta cheese
Chop everything first for easy meal making
How to Make Protein Egg Bites at Home
Start by preheating your oven to 350 degrees.
In a skillet over medium-high heat, cook the chopped onion and green pepper for about 5 minutes until they begin to soften. I love using a bench scraper to transfer chopped veggies to a skillet!

Add the quartered sausage and continue cooking for about 8 more minutes, or until the sausage is slightly browned and cooked through.
While the sausage mixture cooks, whisk the eggs, milk or cottage cheese, shredded cheddar cheese, salt, garlic powder, Italian seasoning, and chopped chives together in a large bowl.
Parchment liners help things not stick!
Line 12-14 muffin tin cups with parchment paper muffin liners and lightly spray them with avocado oil.
Fill the cups with the sausage mixture first
Divide the cooked sausage and veggie mixture evenly between the muffin cups. Then pour the egg mixture over the top until the cups are filled evenly.
Then add the egg mixture
If desired, sprinkle extra cheddar cheese on top before baking or add a spoonful of cooked quinoa to each cup for even more protein and texture.
Bake for 18 to 22 minutes, or until the centers are fully set and no longer jiggly.
Allow the egg bites to cool slightly before serving.
Simple, easy and delicious!
