This is the perfect comfort soup that is also super healthy, easy and food allergy friendly!
I call this “Sunday Soup” because on most Sundays, I have a little extra time AND want something really hearty to eat. I’m not sure why Sunday seems like the perfect day for comfort food, but I love it!

Servings: 6-8
Preparation + Cooking Time: 50 minutes
Suggested kitchen tools: baking sheet or roasting pan, knife, blender (preferably a high speed one like a Vitamix), parchment paper
Ingredients:
10 medium sized tomatoes
3 red peppers
1 tablespoon Herbs De Provence seasoning
1 tablespoon dried rosemary
1 tablespoon oregano
2 teaspoons smoked paprika
2 tablespoons olive oil
3 tablespoons tamari or liquid aminos (like soy sauce but it has less sodium)
1 15.5 oz. can cannellini beans, drained and rinsed
2 cups vegetable stock (I used low sodium)
1 tablespoon double concentrated tomato paste (or 2 tablespoons regular tomato paste)
3 tablespoons coconut sugar
sea salt and pepper (for seasoning)
Optional toppings: My vegan cashew cream, hemp seeds, fresh basil, crumbled rosemary crackers
How-To:
Heat the oven to 400 degrees (F)
Quarter the tomatoes and cut the red peppers into slices (see the image below the recipe for a visual). Place on a parchment lined baking sheet.
Sprinkle the Herbs De Provence, rosemary, oregano, smoked paprika and olive oil over the tomatoes and peppers. Gently stir to combine. Place in the oven and roast for 30 minutes, stirring at the half way cooking point.
Place the roasted tomatoes, peppers and seasoning into a blender with the liquid aminos, rinsed and drained beans, vegetable stock, tomato paste and coconut sugar. Blend for approximately 5-8 minutes, or until well blended and smooth.
Season with salt and pepper as desired.
Eat and enjoy!

Keep leftovers refrigerated in a sealed container
If you do not have a high speed blender, you can make this in a regular blender, but you may have to blend in batches, as a regular blender may not be large enough to blend it all at once.
Season with your favorite spices instead of the ones I suggested. Be creative and see what version of this soup you can come up with!
