My secret ingredient (cinnamon) does not have to be added, but it does deepen the chocolate flavor. You could add espresso powder instead!

4 quart saucepan, measuring cup, spatulas, measuring spoons, parchment, lidded glass container for storage, spoons
Prep time: 5 minutes
Cook time: 5 minutes
Total time: about 10 minutes

1 cup granulated sugar (I used coconut sugar for its lower glycemic index)
1/4 cup ghee or butter
1/4 cup milk (I used almond milk)
2 tablespoons cocoa powder
1 teaspoon cinnamon (the secret twist!)
1/4 cup peanut butter (creamy or crunchy, yes you can use almond butter or cashew butter instead)
1 teaspoon vanilla
1 3/4 cups quick-cooking oats

How to Make 10-Minute Chocolate Oatmeal Cookies
Step 1: Boil the Base
In a saucepan over medium-high heat, combine:
sugar
ghee or butter
milk
cocoa powder
cinnamon
Bring the mixture to a full boil, stirring occasionally.
Boil then mix…so simple!
Step 2: Add Remaining Ingredients
Reduce heat to low and stir in:
peanut butter
vanilla
quick oats
Mix until everything is fully combined and coated.
Using 2 spoons speeds up the process!
Step 3: Shape the Cookies
Remove from heat.
Drop spoonfuls onto a parchment-lined tray.
Use your fingers or the back of a spoon to gently shape them if desired.
