An easy, throw-it-together side dish perfect for picnics, potlucks and more! Eat it alone or as a topping for a veggie burger, a potato or barbecue! It’s vegan and dairy-free but full of creamy and tangy flavor!

Preparation + Cooking Time: 10 minutes
Suggested kitchen tools: measuring cup, measuring spoons, large mixing bowl
Ingredients:
12 oz. package broccoli slaw mixture (I purchased mine at Whole Foods)
1/2 cup vegan mayo (I used Sir Kensington’s Fabanaise)
1 1/2 tablespoons apple cider vinegar
1 tablespoon coconut sugar
1/4 cup almond milk
2 teaspoons poppy seeds
How-To:
Make the dressing: In a medium sized mixing bowl, whisk together the vegan mayo, apple cider vinegar, coconut sugar, almond milk and poppy seeds.
Add the broccoli slaw to the dressing. Toss to combine.
Eat and enjoy!
Tips and Tricks:
This dish is best served cold
I like to let my slaw “marinate” for about 1-2 hours (or longer) before serving. This allows the flavors to become slightly more intense,
Keep any leftovers in a sealed container in the refrigerator
Want it sweeter? Add more sugar. You can use sugar cane instead of the coconut sugar. You may need slightly less if you sub anything else for the coconut sugar as it tends to be not quite as sweet as other sugars.
Want it tangier? Add more apple cider vinegar.
Want it creamier? Add more vegan mayo.
