I love a good BLT. However, giving up meat years ago meant giving up the one part of the BLT that I loved. The BACON! Then I learned all about bacon alternatives like coconut bacon and tempeh bacon. Those alternatives meant BLT’s could come back into my life!
This recipe is a twist of a traditional BLT as it has pepper jack cheese and avocado and bagels! I hope you enjoy them as much as my husband and I do!

Servings: 4
Preparation + Cooking Time: 20 minutes
Suggested kitchen tools: medium skillet, toaster, measuring spoons, knife
Ingredients:
1 six oz. package LightLife Foods Fakin’ Bacon Organic Smoky Tempeh Strips
4 bagels (I used Plain Awesome Bagels by Dave’s Killer Bread, which do not contain any animal derived ingredients)
5 oz. bag of fresh spinach
8 slices vegan cheese (I used Follow Your Heart Pepper Jack)
4 teaspoons vegan mayo (I used Sir Kensington’s Fabanaise)
1 large tomato, sliced
1 avocado, sliced
1 tablespoon olive oil (or any high heat cooking oil)
How-To:
Heat the olive oil in the skillet on medium heat
Add the Fakin’ Bacon strips (I cut mine in half) to the skillet and fry on each side until slightly crisp and browned, about 3-4 minutes. Remove from heat and set aside.
Toast the bagels, slice the tomato and the avocado
Assemble the bagels: Spread 1/2 teaspoon of vegan mayo onto each half of a bagel. Top each half with 1 slice cheese, a handful of spinach, 2-3 tempeh strips, tomato and avocado.
Eat and enjoy!

We ate ours open faced, but you could place the two bagel sides together and eat it like a sandwich
Don’t like cheese? Don’t add it. Don’t like spinach? Add lettuce instead. Make the sandwich how YOU like it! Be creative, as that’s what cooking is all about.
