Healthy lunch options can be hard to find so I’m always trying to create my own easy options for myself and others. I often make this for my lunch as it’s super packed with healthy fats that keep me full for hours. You can’t go wrong with the creamy avocado, tangy lemon juice and sweet potato combination. It’s paleo friendly, gluten free, vegetarian and super awesome! You can meal prep this the night before for a healthy work lunch as well.

Servings: 1
Preparation + Cooking Time: 15 minutes
Suggested kitchen tools: small skillet, knife, fork
Ingredients:
1 small organic sweet potato
1 organic egg
1/2 avocado
1 tablespoon fresh lemon juice
1 tablespoon Miyoko’s dairy free butter
1/2 teaspoon coconut oil
sea salt, pepper and nutritional yeast for seasoning
How-To:
Rinse the sweet potato and poke some holes all around it using a fork. Place it in the microwave and cook for 8-10 minutes, or until it’s soft on the inside. Alternatively, you can cook it in a 400 degree (F) oven or toaster over for approximately 45 minutes.
While the potato cooks, place the coconut oil in a small skillet and melt on medium heat. Add the egg, season with a bit of sea salt and pepper and cook on both sides for approximately 3-5 minutes or until cooked through. Alternatively, you can hard boil an egg.
When the potato is done, place it on a plate, slice it open and add the butter. Place the cooked egg on top to help the butter melt.
Top with a squeeze (about 1 tablespoon) of fresh lemon juice, a dash of sea salt, pepper and nutritional yeast.
Either serve the avocado on the side or slice it and place on top of the egg.
Eat and enjoy!
Tips and Tricks:
I found my ingredients at Whole Foods but the ingredients could be found at most grocery stores and online
Omit the Miyoko’s butter and use ghee instead to make this paleo
