Need a QUICK and EASY and DELICIOUS dessert for a crowd? Try this super awesome peach dessert! It’s vegan, dairy free and gluten free but not flavor free!
It’s yummy on it’s own OR when served with dairy free vanilla ice cream! See the Tips and Tricks section below the recipe for some helpful recipe ideas.
Servings: 4-6
Preparation time: 20 minutes
Suggested kitchen tools: a large skillet, spatula (for stirring), knife, measuring cup
Ingredients:
5 peaches, rinsed and cut into slices
1/2 cup coconut sugar (check the ingredients to ensure it’s gluten-free as some coconut sugars have gluten)
4 tablespoons vegan butter (I used Miyokos brand and I found it at Whole Foods)
1 cup (8 oz.) grain free granola (I used Autumn’s Gold Toasted Coconut Almond Grain Free Granola and found it at Costco)
Optional: a dash of cinnamon, dairy free vanilla ice cream
How-To:
Melt the butter in a skillet on medium low heat
Add the sliced peaches, coconut sugar and the optional dash of cinnamon to the melted butter. Gently stir to combine.
Reduce the heat to low, cover and simmer the mixture for 5-7 minutes or until the peaches are tender. Stir occasionally if needed.
Remove from heat and top with the granola.
Serve in a bowl with a dairy-free ice cream.
Eat and enjoy!
Tips and Tricks:
This dish is best served warm or at room temperature
Keep leftovers in a sealed container in the refrigerator
Afraid of coconut sugar? That’s okay! Try sugar cane or your favorite sweetener, however, you may need less as coconut sugar is less sweet than most sweeteners.
Don’t like peaches? Try this with sliced apples. You will need to simmer them slightly longer to soften.
