Preparation + Cooking Time: 15 minutes
Suggested kitchen tools: measuring spoons, large skillet, garlic press
Ingredients:
two 15 oz.cans cannellini beans, drained and rinsed
5 oz. bag of fresh spinach
2 tablespoons olive oil
2 cloves garlic, pressed or finely chopped
1/2 cup grated Parmesan cheese (I used vegan parm cheese from Violife)
Optional: salt and pepper to taste
How-To:
Heat the olive oil on medium to medium low heat. Add the garlic and sautee 1 minute.
Add the beans and cook 1-2 minutes
Add the spinach and cook until the spinach is wilted, about 3-5 minutes. Stir continuously as the spinach wilts. The beans will naturally mash as you stir.
Remove from heat and add the grated Parmesan cheese
Season with salt and pepper as desired
Serve in bowls with additional Parmesan cheese if desired, eat and enjoy!
Tips and Tricks:
I found my ingredients at Whole Foods but the ingredients could be found at most grocery stores and online
Don’t like cannellini beans? Try another bean like pinto!
