Made for Two – No scaling recipes or wasting leftovers. This is a version of my Hot Fudge Chocolate Cobbler recipe, but smaller and in a cute heart shaped pan! I call it “lover boy” inspired by the song “Lover Boy” by Billy Ocean.

Now for the cake! It’s so much easier than you may think. Here’s what you’ll need:

Servings: 2-4 (depends on your love of dessert!)

Time to Make: 60 minutes (including cooling time)

Tools: 8, 9 or 10 inch baking dish (mine is a heart shaped cast iron pan) measuring cup, and measuring spoons, spatulas, whisk

Cake Ingredients:

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • ¼ cup coconut sugar (you can use white sugar instead)

  • 1 tablespoon cocoa powder

  • 1/4 cup almond milk (or your favorite milk milk)

  • 1.5 tablespoons melted coconut oil (you can use melted butter or ghee instead, plus a little extra to grease the pie pan)

Fudge Sauce Ingredients:

  • 2 tablespoons (1/8 cup) cup cocoa powder

  • 1/2 cup hot water

  • 1/2 teaspoon corn starch

  • 1/2 cup coconut sugar (or you can use white sugar instead)

Optional: dairy free or regular ice cream of your choice

My ingredient set up

How-to:

Pre-heat the oven to 350 degrees (F)

Use a little melted butter or softened coconut oil to grease the baking dish. Set aside.

Mix the dry cake ingredients (flour, salt, baking soda, baking powder, 1/2 cup coconut sugar, cocoa powder) in a medium sized mixing bowl.

Add the milk to the dry ingredients and stir until combined. Then add the melted coconut oil and stir again. Do it in this order so your butter or coconut oil won’t solidify again due to the coolness of the milk. Spread into your greased baking pan.

Spread the cake batter in the dish first

Whisk the fudge sauce ingredients (cocoa powder, hot water, corn starch, 1/2 cup coconut sugar) in a medium sized mixing bowl. It will be very “watery” and will look like hot cocoa (you want this as it will thicken as it bakes).

Pour the fudge sauce mixture on top of the cake mixture. Do not stir! FYI: It may seem strange looking at this point, but that’s okay! The watery fudge sauce will become thick and sink to the bottom of the pan while the cake will rise to the top.

The corn starch will make this into hot fudge

CAREFULLY place in oven and bake for 20-25 minutes (it may take a bit more or less time depending on your oven) or until the cake is mostly set in the middle. It should still jiggle slightly due to the hot fudge underneath.

Let rest for about 20 minutes (if you can wait!) and serve alone OR with your favorite ice cream.

I found all my ingredients for this recipe at Whole Foods. Most large grocery stores have all these ingredients as well.

Leftovers keep best when covered and refrigerated.

Want it even more chocolate-y? Add about 1/4 cup of dairy free mini chocolate chips to the cake batter OR sprinkle some on top when serving.
