The Recipe Inspiration
We love overnight oats for busy mornings. We’ve made so many different varieties over the years, but this year, I was inspired to create a green version, perfect for Christmas morning! When Quaker sent us their protein oats to try, it was the perfect time to experiment with my own recipe.
I love coloring food with natural colorants, so for this green overnight oats recipe, I pulled out my matcha powder from my witchy finger pretzel creations, and it worked perfectly! It doesn’t add much flavor, so it pairs perfectly with this overnight oats recipe and creates the perfect Grinch Green oatmeal color.

Grinch Green Cinnamon Overnight Oats That Stole Christmas Breakfast (and Helps the Heart)
If the Grinch loved breakfast, this would be it 💚. I wondered what flavor the Grinch would like best, and since cinnamon has health benefits such as it may reduce the risk of cardiovascular disease (according to UAB Medical West), I thought it would complement the Grinch perfectly. The Grinch’s heart put in a lot of work at the end of The Grinch movie, so cinnamon would keep that heart going strong!
These are delicious and super filling!

Can I Make This as Regular Oatmeal?
Yes, you can make regular oatmeal according to the package directions, add the sweetener and green match powder at the end of the cooking process, and have Grinch Green warm cinnamon oatmeal. Or, make whatever oatmeal you like, and color it green to be Grinch-y!

Time to Make: 10 minutes or less, then 4-24 hours for refrigerator time)
Tools: Vintage Coffee Cups (the lidded glass bowls I used for this recipe for easy storage), measuring cup, and measuring spoons

Ingredients You’ll Need Per Serving
(Exact measurements below)
½ cup old-fashioned rolled oats (we tested Quaker Protein Rolled oats, and they were perfect and made us such a great filling breakfast, but others like the 365 Brand will work too).
½ cup milk of choice (dairy or non-dairy both work great, I used 3-ingredient Califa Farms Almond Milk)
1-2 tablespoons maple syrup, honey, brown sugar or a sweetener of your choice (but maple syrup compliments the cinnamon the best, adjust sweetness to fit your tastes)
½ teaspoon ground cinnamon
1 teaspoon chia seeds (acts as a nice binder with health benefits, but if you can’t tolerate seeds, you can omit them)
1 teaspoon matcha powder or plant-based food coloring (for that Grinch-green color!)
Optional toppings: Red and green sprinkles, sliced strawberries (for a “Grinch heart” moment❤️), mini chocolate chips, whipped cream (snow!)
Adding the cinnamon
How to:
Step 1: Make the Oats
In a bowl, combine the oats, milk, maple syrup and cinnamon and stir.
Adding the chia seeds
Add the matcha powder, stir. Then add the chia seeds. Stir.
Ready for the fridge!
Step 2: Chill Overnight
Cover and refrigerate for at least 4 hours, but overnight is best. This gives the oats time to soak and become ultra-creamy.
Place in the fridge for 4-24 hours
Step 4: Decorate & Serve
Give the oats a stir in the morning and add your favorite festive toppings. I added a bit more maple syrup to mine. Sprinkles can bleed colors, so it’s best to add them in the morning. This is where the Grinch vibes really come to life ✨

Make It Your Way
Dairy-free: Use almond, oat, or coconut milk + dairy-free yogurt
Extra protein: Add a scoop of vanilla protein powder or use the protein oats as I did
Sweeter: Drizzle extra honey or maple syrup before serving like I did
Thicker oats: Use slightly less milk
