A vegan alternative to heavy cream--CASHEW CREAM! It's easy and yummy! Use it in place of any recipe that calls for heavy cream.
Did you know that humans do not need dairy? Our bodies need the vitamins, but not the actual dairy itself.
Part of the thought process behind humans thinking they need dairy in their diets was smart marketing on the behalf of the dairy industry. Smart marketing can get many people to think they need many things!
Since I cut dairy from my diet, I have had many less breakouts AND my husband has had a much happier tummy!
There are SO many dairy alternatives you can get vitamins from (calcium, vitamin D and more) like supplements and from other foods like kale (yes kale!)
Many recipes like gratins and certain cake icings call for heavy cream so I created this great alternative if you are trying to cut dairy from your diet. It works as a great sub!
Please note: It does not whip up like heavy whipping cream. If you are looking for a dairy free whipped cream, try my Coco-Whipped Dream recipe!
Yield: Approx. 1 1/4 cups
Ingredients:
3/4 cups cashews
1 cup water
How-to:
Blend cashews with 2 cups water in a high speed blender (like a Vitamix or Magic Bullet) until white, creamy and smooth. (About 3-4 minutes on a high speed setting).
Tips and Tricks:
Don't have a high speed blender? Use a regular blender, but soak the cashews in some hot water for about 30 minutes prior to making.
I've used this cream as a "white pizza" base. After I blended it, I added 2 heads of roasted garlic, a pinch of salt, and then blended it some more. It tasted amazing on a pizza crust with spinach and vegan mozzarella!
Save the leftover cream and use it as a coffee creamer.
Add a touch of a sweetener and pour it over some fresh fruit like peaches. YUM!
