The Yummy Inspiration
I have always loved chocolate mint. Every birthday cake I had as a kid, I requested a chocolate mint ice cream cake. The combination of mint and chocolate for some reason is delicious and refreshing to me. When I found some mint chocolate cookies similar to Girl Scout Thin Mints, I knew I could do something fun with them.
I saw some mummy candy in a Vermont Country store catalog (I love this catalog!) and that started me on a mummy treat recreation adventure. Don’t feel like making cute treats? Order here from the Vermont Country Store, which was my grandma’s favorite place to get cute treats, soaps and more!

What If I Don’t Like Mint Chocolate?
If you don’t like mint chocolate, you can still make these mummy no-bake cookies! Simply use whatever cookie you like best. You could even make your own like these highly rated chocolate chip cookie recipes from Food 52.
My Failure
I first thought to do some ice cream bon bons, using mint chocolate ice cream, white chocolate and the fudge mint cookie on the bottom. That experiment completely failed. The ice cream was melty after re-freezing for a couple of hours. Next time, if I ever try using ice cream in a recipe again, I think I’ll need to freeze it overnight.

Why Failure is Good
I do not “nail” each creation I make. I actually fail at a lot of things I try. However, with each failure, I learn something and keep trying. I think the biggest issue with failure is it causes many to freeze up and not try again, but to me that’s the ultimate failure.
Like the saying goes, you gotta get “back in the saddle” or “if you fall off a horse, get right back on”, use the failures as lessons, and try it again, in a new way. Read more about why failure is the key to success in this article via Forbes.

How to Make Easy DIY Mint Chocolate Yummy Mummy Cookies
Now for the recipe. You need just 4 ingredients to make these easy no-bake cookies. All my links below go out to Amazon, Walmart or Target.
Yield: approximately 20 cookies
Time: 30 minutes to make
Tools:
Parchment paper (not necessary, but prevents messes and sticking)
Ingredients:
12 ounces white chocolate chips (I used Guittard and love it!)
1 tablespoon shortening (you can also use coconut oil)
Back to Nature Fudge Mint Cookies or use what cookies you like best (get them via Amazon, Kroger, Whole Foods and more)
Halloween edible décor (I got this set on Amazon and used the eyes and black dot sprinkles)
12 inch piping bags or freezer bags
Piping bag holder or a tall glass
Scissors (for bag)
Optional: dedicated food or culinary tweezers

Note: I stored mine in a sealed container in my fridge (we live in a hot climate) for about 6 days and they were still delicious.

The ingredients for the no-bake desserts
How-To:
Line a baking tray with parchment paper and set aside.
Adding the shortening makes the chocolate flow a bit better
Place your chocolate in a glass measuring cup with the 1 tablespoon shortening (use 1/2 to start and if your chocolate is thick, add the other half as needed) and place in the microwave. Melt the chocolate in 30 second increments on 50% power. Stir using a spatula or spoon in between the time increments and keep going until it’s melted and creamy. Do this slowly so you don’t burn the chocolate. You could alternatively use a double boiler method to melt the chocolate.

Pour the warm chocolate into the piping bag or ziplock bag. I used a piping bag stand for this but a glass will work well. Just put the bag in the glass to make it sit upright and spoon or use a spatula to pour it all in.

Lay the cookies out onto the parchment.
Add space between the cookies
Lift the bag up, twist the top to secure the chocolate inside and cut off a tiny bit at the tip of the bag.
Adding the chocolate “bandages”
Squeeze the bag and drizzle the chocolate all over the cookies going back and forth to create “mummy” bandages. I added a lot of chocolate “bandages” to conceal the cookie underneath.
Adding the edible eyes
While the chocolate is starting to set, promptly use your tweezers or fingers to add the eyes décor.
Allow to fully dry to let the décor stick. Place the tray into a refrigerator to speed up the chocolate hardening.
The Yummy Mummies!
I stored mine in a sealed container in my fridge to keep them fresh and firm (we live in south Florida and everything melts here…even in the winter sometimes!).
Place on Halloween party dessert tables, or place in a bag for lunchbox surprises, or give to friends and family as a sweet treat. Or eat them yourself!
