My husband loves chili, fries and cheese and ESPECIALLY loves them when they are all in a bowl together.
Unfortunately his stomach cannot tolerate dairy cheese, so I altered a traditional chili cheese fry recipe and made it vegan and dairy free so his tummy could be happy!
Servings: 3-4
Prep time: 30 minutes
Ingredients:
Two 14.7 ounce cans of Amy’s Organic Medium Chili, Light in Sodium (or sub in your favorite vegan chili)
One 16 ounce bag frozen crinkle cut french fries (I used Whole Foods 365 no added salt organic fries)
1 recipe of my Vegan Smoky Cheddar “Cheese” Sauce (it’s made with cashews and oh, so dreamy and creamy!)
Optional: 1-2 green onions, chopped
How-to:
Bake the fries on a parchment lined baking sheet according to package directions. Sprinkle lightly with salt before baking, if desired.
Heat the chili according to the directions on the can (I prefer the stove top method)
Make my recipe of Vegan Smoky Cheddar “Cheese” Sauce
Serve: Place some fries in a bowl. Top with some chili, then with some “cheese” sauce. Top with green onions if desired.
Eat and enjoy!
Tips and Tricks:
Instead of the smoky cheddar “cheese” sauce, try topping this with vegan shredded cheese.
Instead of my smoky cheddar “cheese” sauce, spice this dish up with my Vegan Jala-hallaaa-peno Cheese Sauce instead!
