My husband loves buffalo sauce and all things ranch dressing, so I created this combo which marries the two into matrimonial bliss! It’s super easy and filling as well.
It comes together very quickly and can be eaten for breakfast, but also for lunch and dinner too!

Yield: 4 servings
Prep/Cooking Time: 30 minutes
Suggested cooking tools: measuring spoons, measuring cup, medium saucepan, large skillet, spatula
Ingredients:
1 recipe of my Vegan Ranchy-Rancherson Dressing
4 eggs (organic and free range are the best)
2 cans cannellini beans, rinsed and drained
1/4 cup sriracha or chili garlic hot sauce (I used Cholula Chili-Garlic Hot Sauce)
4 tablespoons vegan butter (I used Miyoko’s brand)
1 tablespoon olive oil, divided
How-to:
Prepare the Vegan Ranchy Rancherson Dressing. Store it in the refrigerator until you are ready to use it.
Make the beans: Melt the butter in a medium skillet on medium heat. Add the drained and rinsed beans and the hot sauce. Cook until warm, 3-4 minutes. Remove from the heat, cover and set aside.
Put 1/2 tablespoon olive oil in a skillet and heat to medium heat. Crack two eggs and allow them to cook for a few minutes. Flip and cook on the other side a few more minutes or until it is fully cooked, breaking the yolk as necessary. Repeat the cooking process with the 2 other eggs.
To plate one serving: Put 1/4 of the beans on a plate, top with one cooked egg, some ranch dressing and a bit more sriracha if desired. Repeat to create the other 3 servings.

Don’t have time to make my Vegan Ranchy Rancherson Dressing? Use bottled dressing instead.
Don’t want to fry the egg? Scramble, hard boil or cook it the way you like best.
Store leftovers in sealed containers in the refrigerator.
