This meal is filling and fantastically EASY as the majority of the cooking is done by your slow cooker! Each potato steams perfectly in either 4 our 8 hours!
Servings: Makes 4
Ingredients:
4 medium sweet potatoes
1 cup frozen corn, thawed
1 can (15 oz) spicy black beans (with their liquid)
1 avocado
1 teaspoon lemon juice (I used Santa Cruz brand bottled juice)
4 eggs, fried (or scrambled, poached or however you love your eggs!)
Optional toppings: 1 recipe of my Vegan Jala-hollaaa-peno Cheddar Sauce, 4 teaspoons cilantro, 4 tablespoons salsa
How-To:
Scrub and rinse your sweet potatoes without drying. Poke a few holes in them using a fork. Place them in your slow cooker and set it to cook for either 4 hours (on high) or 8 hours (on low).
About 30 minutes before the potatoes are done, cook the corn according to the package directions.
Cook the beans (keeping them in their liquid) over the stove top for approximately 10 minutes over medium-low heat. You could also warm them in the microwave.
Make the Vegan Jala-hollaaa-peno Cheddar Sauce (if you want to top the potatoes with it). Set aside.
Fry the eggs (or make them however you wish…..I sometimes place one egg in a microwave safe ramekin, scramble it with a tiny bit of salt and pepper and cook for about 60 seconds, or until cooked through, to speed up this meal).
Slice the avocado and place in a bowl with 1 teaspoon lemon juice. Set aside.
Chop the cilantro (if using). Set aside.
To assemble each potato: Layer approx. 1/4 cup beans, 1/4 cup corn, 1 cooked egg, a couple of slices of avocado, a couple of tablespoons of cheddar sauce, some salsa, then cilantro.
Tips and Tricks:
Cooking your sweet potatoes in the microwave can be a quick method of cooking if you don’t have the time to use the slow cooker. Just wash each, poke holes in them and put them on a microwave safe plate for 10-20 minutes.
My husband can’t have egg yolks, so we top his potato with cooked egg whites. He still loves it!
The lemon juice sprinkled on the avocado helps it from browning too quickly AND enhances it’s flavor. You could also use lime juice instead of the lemon juice.
