What do you call a dressing that is WAY BETTER THAN YOU CAN BUY IN A STORE? Razzle Dazzle Raspberry Vinaigrette of course! This is amazing, is only 5 ingredients and is ready in 15 minutes or less! Worth it!
Prep/cook time: 15 minutes or less
Yield: 6 servings
Suggested cooking tools: measuring cup, measuring spoons, large mixing bowl, sauce pan, small wire strainer, spoon or rubber spatula
Ingredients:
16 ounce bag of frozen raspberries
1/4 cup maple syrup (or liquid sweetener of your choice like agave nectar)
1/4 cup olive oil
2 tablespoons apple cider vinegar
2 teaspoons dijon mustard
How-to:
Make some raspberry puree: Place the frozen raspberries in a saucepan and heat on medium low, stirring constantly (and “mushing a bit) until the berries look sort of “melted” and are dissolved into a thick consistency, about 5-8 minutes. (See images below the recipe for a visual reference).
Place the melted raspberries in a wire strainer while holding over a bowl. Strain through the strainer using a spoon or rubber spatula until the puree is all strained from the berries into the bowl. You should have mostly just seeds left in the strainer (which you can discard) and about 1/4 cup puree in the bowl. (See images below the recipe for a visual reference).
Whisk the maple syrup, olive oil, apple cider vinegar and the dijon into the raspberry puree.
Serve on your favorite salad, eat and enjoy!
Tips and Tricks:
Store leftovers in a sealed container in the refrigerator
The raspberry puree mixed with only maple syrup (which is called Raspberry Coulis) makes a great sauce for chocolate cake, pie, cheescake and pudding!
