I started craving cold cut sandwiches lately. The weather changed to being much warmer and all I could think about was sandwiches! Sooo….I came up with something delicious and healthy, but of course!
While eating as grain-free as possible, I didn’t want to make a sandwich with bread, but knew a good piece of lettuce would do the trick. I combined it with my favorite organic turkey and some toppings and created a recipe that is gluten-free, dairy free and paleo friendly!
Need to make it vegetarian? Use cheese instead of the turkey. Need to make it vegan? Use a vegan cheese instead. It’s that versatile of a recipe!

Servings: 8 wraps
Preparation + Cooking Time: 10 minutes
Suggested kitchen tools: small mixing bowl, spoon
Ingredients:
One 6 oz. package of cooked turkey (I used a container of Whole Foods organic smoked mesquite turkey cold cuts which contained 8 slices)
1 head of leaf lettuce (separated and rinsed)
1 avocado, sliced
4 tablespoons mayo (I used a dairy free version)
1/2 fresh lime (juice only)
1 tablespoon Chipotle Pepper Adobo with Roasted Tomato (I used Frontera brand)
Optional: vegan cheese (I like Miyoko’s Pepper Jack)
How-To:
Mix together the mayo, lime juice and chipotle adobo in a bowl. Set aside.
Rinse the lettuce and separate, cut the avocado, cut the turkey slices in half. Set aside.
Assemble the wraps: Spoon some of the mayo mixture onto a lettuce leaf. Top with 2 halves of turkey, and 1-2 slices of avocado. (Slice the cheese into small pieces and add it too if you are using it).
Transfer to a plate, hold it like a taco, eat and enjoy!
Tips and Tricks:
I found my ingredients at Whole Foods but the ingredients could be found at most grocery stores and online
Don’t like turkey? Try chicken or another form of meat instead.
Need to make it vegetarian? Use cheese instead of the turkey.
Need to make it vegan? Use a vegan cheese instead.

Can’t find the Frontera adobo sauce? Sub in 1/2 teaspoon chipotle powder
