I used to love chicken salad. When I went completely meat-free a while back though, I had to say goodbye to it forever. But I wasn’t sad. Being meat-free is something that naturally happened in my life over the course of many years. Check out my eBook about it by clicking here.
Being meat-free does not mean you have to sacrifice eating GOOD FOOD. You just have to do your research and be creative! I loved my Smashed Chickpea Salad with Nuts and Berries recipe, so I got even more creative and created this version using curry and optional cashews.
Don’t let the curry scare you as it’s not spicy. I only used the curry for flavor and the vegan mayo also works to cancel out any spiciness.
It tastes super delicious on it’s own OR for those that like savory AND sweet—it’s delicious served with my 1980’s Baby T.V. Dinner Fruit Compote!
Servings: 6-8
Ingredients:
Two 15.5 oz (or comparable size) cans of chickpeas, rinsed and drained
1/2 cup mayo (I used Sir Kensington's Fabanaise, a vegan mayo)
1/2 teaspoon salt
1 teaspoon curry
OPTIONAL: 1 cup cashews, crushed. (I crushed them by using a small meat tenderizer mallet while they were in a Ziplock bag). I added cashews to mine because I wanted a little crunch. You do not have to add them if you’d like to cut some fat from the recipe.
How-To:
Place chickpeas in a large mixing bowl. Use a fork to smash them. No need to smash every single one; just the majority. (See the photo below the recipe for a good idea on what they should look like after smashing).
Add the mayo, curry, salt, (and the optional cashews if using them) to the chickpea mixture.
Lightly mix until all ingredients are incorporated.
Serve with crackers, on a sandwich, on a bagel with some spinach, or with my favorite, Nut-Thins!
Tips and Tricks:
Tailor this salad to fit your tastes. See what other combinations you can come up with! Add almond slivers instead of cashews. The possibilities are endless!
Add more or less curry depending on your tastes.
