My husband loves chips and Mexican style food more than anything sooooo…… I created these! He LOVES them! The chips don’t stay very crispy, but they add some delicious flavor. Be creative with this dish if you’d like! See my Tips and Tricks section below the recipe for some ideas.
Servings: 3-4
Tools/Pans: Foil, griddle/flat pan, pie pan, pizza cutter
Ingredients:
1 recipe my I Love Tacos Vegan Cheese Sauce
8-10 tortillas
16 ounce can refried beans (I used Whole Foods Chili and Lime Pinto Refried Beans)
8 ounce bag dairy free cheddar shreds (I used So Delicious Cheddar)
8 ounces frozen fire roasted corn (or use regular frozen corn)
5 ounce bag of your favorite flavored chips ( I used Kettle Brand chips in Jalapeno flavor, but also love their Chili Verde flavor)
1-2 tablespoons vegan butter (I used Earth Balance)
Optional: 1 avocado, mashed and sprinkled with the juice from 1/2 lemon
How-To:
Make the I Love Tacos vegan cheese sauce. Set aside.
Thaw the corn and the tortillas if needed. Set aside.
Warm the beans and corn (I used the stove top, but you can use the microwave)
Butter one side of two tortillas. On the other sides of the tortillas, spread 1-2 tablespoons refried beans.
On one tortilla (on top of the refried beans), layer 1-2 tablespoons corn, 1-2 tablespoons cheddar shreds, 4-5 chips, and 1-2 tablespoons taco cheese sauce. (See the photo below the recipe to see the set up).
Top the layered tortilla with the other tortilla with the refried beans
Heat a flat pan or griddle to medium low heat
Place the prepared burrito quesadilla on the heated pan. Cook for 2-3 minutes or until lightly crisp and brown. Flip and cook on the other side for 2-3 minutes.
Remove from the pan and place in a pie pan and cover with foil to keep it warm. If you don’t have a pie pan, place on a plate and cover with foil.
Repeat steps 5-9 to make 2-3 more burrito quesadillas
Place one burrito quesadilla on a plate and cut with a pizza cutter into four triangular pieces
Serve with extra I Love Tacos vegan cheese sauce and the optional mashed avocado if desired. Eat and enjoy!
Tips and Tricks
This is one of those fun meals that you can be as creative as possible with. Don’t like chips? Don’t add them. Not vegan? Use regular cheese. Have fun and make up your own yummy creation!
