Easy Air Fried Pee Wee Parmesan Potato Recipe

I am always looking for easy side dishes that can be made quickly. I started playing with our new air fryer, an Emeril Lagasse 26 QT Oven with French Doors, in recent months and have been having some fun! We also have top load Instant Pot air fryer, but this Emeril one acts a bit more like a convection oven, which I LOVE too. You can of course use any air fryer or an oven for this, but I don’t think I’ll ever use a basic oven again, as our food always turns out so much better in either an air fryer or a convection oven.

I started experimenting with this air fryer with frozen foods like organic chicken fingers (which turn out super crispy on the outside and soft on the inside), and then moved onto “from scratch” recipes. I had a bag of pee wee potatoes and thought to toss them in some breadcrumbs, parm, salt and pepper, and after some recipe perfecting, I finally can say they turn out perfect every time.

This pee wee potato air fryer recipe is very quick and can be made in about 20 minutes. I’ve served them to my husband as well as family members, and they all love them. I recently served them along with some pizza meatloaf, which is pretty yummy too! You can adjust my recipe to suit your tastes and come up with other recipe possibilities yourself! Now for the recipe! To make air fried pee wee parmesan potatoes, you’ll need the following ingredients (I included basic oven instructions too!):

Tools: Large glass bowl (or any large mixing bowl), air fryer or oven, spatula, parchment paper, knife, strainer (to rinse potatoes)

Time: 15-20 minutes

Servings: 4

Ingredients:

  • 16 ounces or 1 lb. pee wee potatoes (yes, you can use other potatoes IF you cut them up into ½ inch to 1 inch small pieces)

  • Breadcrumbs with Italian seasoning (I used Edward & Sons…you could alternately use plain breadcrumbs and add a teaspoon or so of Italian Seasoning)

  • ¼ cup grated parmesan cheese

  • tablespoon olive oil

  • Salt and pepper to taste

Directions:

1—If needed, preheat your air fryer or oven to 400.

Rinsed pee wee potatoes

2—Rinse your potatoes. Cut any larger ones into smaller pieces (they should be about ½ inch to 1 inch in size).

3—Place potatoes into a mixing bowl and add the oil, breadcrumbs, and parmesan cheese. Add in a few dashes of salt and pepper. Toss with clean hands or a spatula to coat.

4—Place the coated potatoes into the air fryer basket (or alternatively, add them to a parchment lined baking tray if using an oven).

5—Air fry or bake for 15-20 minutes at 400 degrees (F), tossing at the mid-point in the cooking time.

6—Serve with a sprinkle of extra parmesan and eat as a main dish or eat alone.

Tips and tricks:

  • Try adding a different grated cheese for a different flavor

  • Use any other seasonings as desired

  • Spice them up with a dash of crushed red pepper flakes

  • If you use a basic oven, the crispy level will be different, but they will still taste yummy!
