I meal plan my dinners for seven nights every Friday, so I figured I'd pass along the work I do to help others!
Use my planning as a guide to help you plan meals, or use my plans as is.
Most meals I plan are vegetarian, plant-based or vegan, but when the recipes I choose aren't, I make adjustments to suit our dietary needs. You can do the same!

Vegan Mashed Potato Bowls via Rabbit and Wolves
Paleo Spinach Artichoke Breakfast Casserole via Paleo Running Mama (I’ll be using Lightlife foods vegetarian Smart Bacon for this recipe, which will remove the Whole 30 aspect, but I’m fine with that. I’ll also be using egg whites to adhere to our dietary needs).
Roasted Poblano Mac and Cheese via Veggies Don’t Bite (I’ll be cutting the amount of poblanos down to 2—I know how much spice we can handle)
Slow Cooker Enchilada Orzo via Damn Delicious (I’ll be making adjustments to the food brands to keep mine organic).
End of Summer Veggie Stir Fry via Oh My Veggies (I’ve made this before and it is delicious and EASY. I’ll be replacing the eggplant with chickpeas).
Crock Pot Spaghetti Squash Thai “Noodle” Bowl via The Skinny Fork

TIP: Last week I used this recipe to cook sweet potatoes: Crock Pot Sweet Potatoes via Food Faith Fitness, and I had to share my results. THIS WAS THE BEST SWEET POTATO COOKING METHOD I’VE EVER TRIED. Each of them were perfectly cooked. I used the 4 hours on high method and cooked 4 sweet potatoes. I’ll always use this method from now on! :)
