I meal plan my dinners for seven nights every Friday, so I figured I'd pass along the work I do to help others!
Use my planning as a guide to help you plan meals, or use my plans as is.
Most meals I plan are vegetarian, plant-based or vegan, but when the recipes I choose aren't, I make adjustments to suit our dietary needs. You can do the same!

Vegan Pot Pie via Nora Cooks (I’ll be using a pre-made spelt crust for the bottom and the top of the pie and shredded hearts of palm rubbed with some poultry seasoning for the “chicken”)
Lemon Herb Roasted Potatoes via Rock Recipes (I’ll be serving ours on toast with fried eggs)
Kimchi Fried Rice with Smoky Tempeh and Broccoli via The First Mess
Oil Free Smoky Chipotle Chickpeas via The Vegan 8 (Meant to make this last week, but I made something else. I still want to try it, so here it the recipe again! I’ll be serving ours on baked potatoes, as the recipe photo shows)
