I meal plan my dinners for seven nights every Friday, so I figured I'd pass along the work I do to help others!
Use my planning as a guide to help you plan meals, or use my plans as is.
Most meals I plan are vegetarian, plant-based or vegan, but when the recipes I choose aren't, I make adjustments to suit our dietary needs. You can do the same!

Return to the Future Vegan Texas Dip via ME (An easy, slow cooker recipe too!)
One Pot Gnocchi with Sausage and Kale via The Almond Eater (I’ll be using Lightlife Foods Vegetarian Sausage, gluten-free Capello’s gnocchi (that I will bake first in order to crisp it up a bit) and vegetable broth in lieu of the chicken broth and GoVeggie vegan cream cheese).
Vegan Butternut Squash Carbonara with Beet Bacon via My Berry Forest
Cheesy Chickpeas via Chocolate Covered Katie (I’ll serve ours with roasted cauliflower and quinoa cooked in low sodium vegetable broth)
Easy Broccoli Cheddar Quiche via Food, Folks and Fun (I’ll be using Daiya dairy-free cheese and a pre-made spelt crust).
Dessert Option: Oozy Goozy Chocolate Peanut Butter Cup Mug Cake for 1 via ME!
