I meal plan my dinners for seven nights every Friday, so I figured I'd pass along the work I do to help others!
Use my planning as a guide to help you plan meals, or use my plans as is.
Most meals I plan are vegetarian, plant-based or vegan, but when the recipes I choose aren't, I make adjustments to suit our dietary needs. You can do the same!

Quinoa Chard Fritatta with Balsamic Onions via Naturally Ella
Vegan Roasted Vegetable Meal Prep via Sweet Peas and Saffron (I’ll be using roasted sweet potato in lieu of the butternut squash).
Spicy BBQ Chickpea and Crispy Polenta Bowls via Half Baked Harvest
Garlicky Spinach Cornmeal Crepes via Naturally Ella (I’ve made these before and they are yummy and easy! I use almond milk in lieu of dairy milk, gluten free baking flour, vegan butter and I fry the egg instead of poaching it.)
Buttered Radishes on Toast with Poached Egg (Again, I’ve made this before because it is yummy and easy! I fry the egg instead of poaching, toast the radishes in the oven, use vegan butter and serve it on gluten free toast).
Company’s Coming Dinner Meal: Million Dollar Spaghetti via Sugar Apron (I use lactose free cream cheese and lactose free sour cream, and remove the cottage cheese. I also use Lightlife foods meatless crumbles in lieu of meat. I’ve made this before with these alterations and it was super yummy!).
Company’s Coming Dinner Meal Side Item: Vegan Sweet Potato Rolls via Vegan Richa
Company’s Coming Lunch Meal: Fall Kale Salad via How Sweet Eats (I’ve made this before and it is delicious! I add tempeh to mine to make it very filling).
Dessert option (I will serve these with Company’s Coming Dinner and Lunch, as the days we are having company are back to back….this way we don’t eat them all ourselves!): Lunch Lady Brownies via Life in the Lofthouse (I use coconut sugar, Earth Balance vegan butter, egg whites, and almond milk as subs in this recipe to cut down sugar and dairy and they are still super delicious! I still use the powered sugar in the icing…some things you gotta keep!).
